Classic Chicken Cacciatore

Ingredients:

4 chicken thighs

4 chicken drumsticks

1 tablespoon of olive oil

1 onion, chopped

2 garlic cloves, minced

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 can (14 ounces) of diced tomatoes

1/2 cup of chicken broth

1/2 cup of dry red wine

2 tablespoons of tomato paste

1 tablespoon of dried oregano

1/2 teaspoon of salt

1/4 teaspoon of black pepper

1/4 cup of chopped fresh parsley

Instructions:

  1. Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned on both sides, about 6-7 minutes. Remove the chicken from the skillet and set it aside.
  2. In the same skillet, add the onion, garlic, red and yellow bell peppers. Sauté for 3-4 minutes, until the vegetables are softened.
  3. Add the diced tomatoes, chicken broth, dry red wine, tomato paste, oregano, salt, and black pepper. Stir to combine.
  4. Return the chicken to the skillet, spooning some of the sauce over the top. Bring the sauce to a simmer, then reduce the heat to low, and cover the skillet with a lid.
  5. Allow the chicken to simmer for 30-35 minutes, or until the chicken is cooked through and tender.
  6. Once the chicken is cooked, remove it from the skillet and set it aside on a plate.
  7. Increase the heat to medium-high and cook the sauce until it thickens slightly, about 5-7 minutes.
  8. Serve the chicken with the sauce spooned over the top, and garnish with chopped fresh parsley.
