Grilled Chicken Sandwich with Roasted Red Peppers

This is one of my absolute favorite chicken sandwiches. It is ridiculously simple and delicious. We make them almost every time we have a cookout because our guests always request them.

Ingredients

Chicken breasts

Red bell peppers

Italian salad dressing

Cheese

Hamburger buns or rolls

Directions

  1. Using a food mallet, pound chicken breasts until thin. If your chicken breasts are very large, slice them in half lengthwise before pounding flat.
  2. Marinate chicken in Italian dressing for at least 3 hours before cooking.
  3. Place red peppers on grill over high heat. Turn several times. Remove from heat when peppers are charred on all sides. Don’t worry if the skins of the peppers are black. They are not burnt! (Unless you left them on way too long, then they might be burnt. And don’t blame me if that are. That is totally on you!)
  4. Place hot peppers into large bowl and cover with aluminum foil. Let them steam themselves and rest until cool to the touch. Then remove stems, seeds, and skin. Slice into 2 or 3 bun-sized pieces.
  5. Grill chicken. Since they are sliced thin, they won’t take too long.
  6. Remove chicken from grill. Top with cheese and roasted red pepper. American cheese works great on this sandwich, but use whatever cheese you like.
  7. Add mayonnaise, mustard, or nothing at all.
  8. Tip: We often add caramelized onions. It makes for a really messy sandwich, but it’s so good!
