Recipe

Ingredients

4 boneless, skinless chicken breasts

1 cup breadcrumbs (seasoned Italian)

1/2 cup grated Parmesan cheese

1/2 teaspoon dried oregano

1/2 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon black pepper

2 large eggs

1 cup all-purpose flour

1/4 cup olive oil

2 cups marinara sauce

1 cup shredded mozzarella cheese

Fresh basil leaves for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a shallow dish, combine the breadcrumbs, grated Parmesan cheese, dried oregano, garlic powder, salt, and black pepper.
  3. In a separate dish, beat the eggs.
  4. Coat each chicken breast in flour, dip it into the beaten eggs, and then press it into the breadcrumb mixture, ensuring it is evenly coated.
  5. Heat the olive oil in a large skillet over medium heat. Fry the breaded chicken breasts until golden brown on both sides, approximately 3-4 minutes per side.
  6. Remove the chicken breasts from the skillet and drain excess oil on a paper towel.
  7. In a baking dish, spread a thin layer of marinara sauce. Place the fried chicken breasts on top of the sauce.
  8. Spoon additional marinara sauce over each chicken breast, covering them generously.
  9. Sprinkle shredded mozzarella cheese over the chicken breasts.
  10. Bake in the preheated oven for about 20-25 minutes or until the chicken is cooked through and the cheese is melted and bubbly.
  11. Remove from the oven and let it rest for a few minutes. Garnish with fresh basil leaves.
  12. Serve the Chicken Parmesan hot, accompanied by spaghetti or your preferred pasta, along with a side of salad or vegetables.

Enjoy!
