Easy Breakfast Casserole Recipe

Breakfast casseroles are a great way to feed a crowd and make the most of leftovers. This recipe for a casserole with eggs, cheese, sausage, potatoes, mushrooms, and bell pepper is sure to be a hit with your family and friends. It is easy to prepare and can be made the night before, so all you have to do in the morning is pop it in the oven.

Ingredients:

1 lb. breakfast sausage

6 eggs

1 cup milk

1 tsp. salt

1/4 tsp. black pepper

1/2 cup shredded cheddar cheese

1/2 cup shredded mozzarella cheese

1/2 cup diced onions

1/2 cup diced bell peppers

1/2 cup diced mushrooms (optional)

1/2 cup diced potatoes (optional)

Instructions:

  1. Preheat the oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. In a large skillet, cook the sausage over medium heat until browned. Drain the fat from the skillet.
  3. In a mixing bowl, whisk together the eggs, milk, salt, and pepper.
  4. Add the sausage, cheddar cheese, mozzarella cheese, onions, bell peppers, mushrooms, and potatoes (if using) to the egg mixture, and stir to combine.
  5. Pour the mixture into the prepared baking dish.
  6. Bake for 35-40 minutes, or until the casserole is set and the top is golden brown.
  7. Let cool for 5 minutes before serving. Enjoy!
