Ingredients:
4 boneless, skinless chicken breasts
1 cup gluten-free bread crumbs
1/2 cup grated Parmesan cheese
1 teaspoon dried basil
1/2 teaspoon garlic powder
Salt and pepper, to taste
2 eggs, beaten
1 cup marinara sauce
1 cup shredded mozzarella cheese
Instructions:
- Preheat the oven to 375°F. Grease a baking dish with cooking spray.
- In a shallow dish, mix together the bread crumbs, Parmesan cheese, basil, garlic powder, salt, and pepper.
- Dip the chicken in the beaten eggs, then coat in the breadcrumb mixture.
- Place the chicken in the prepared baking dish.
- Pour the marinara sauce over the chicken.
- Top with shredded mozzarella cheese.
- Bake for 25-30 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
