Chicken Cordon Bleu

Ingredients:

4 boneless, skinless chicken breasts

4 slices of Swiss cheese

4 slices of ham

1/2 cup all-purpose flour

2 large eggs, beaten

1 cup breadcrumbs

Salt and pepper to taste

Olive oil or cooking spray

Instructions:

Preheat your oven to 375°F (190°C).

Pound the chicken breasts to about 1/4-inch thickness.

Season each chicken breast with salt and pepper.

Place a slice of Swiss cheese and a slice of ham on each chicken breast.

Roll up each chicken breast tightly, securing with toothpicks if necessary.

Dredge each chicken roll in flour, then dip in beaten eggs, and finally coat with breadcrumbs.

Place the chicken rolls seam-side down on a baking sheet lined with parchment paper or aluminum foil.

Lightly spray or brush the chicken rolls with olive oil.

Bake for 25-30 minutes or until the chicken is cooked through and the coating is golden brown.
