Mexican Street Corn – Recipe

Mexican street corn, also known as “Elote,” is a popular and flavorful street food in Mexico. It typically consists of grilled corn on the cob that is slathered with a creamy mixture of mayonnaise and sour cream, then sprinkled with crumbled cotija cheese (or feta cheese as a substitute), chili powder, and fresh cilantro. Ingredients:

4 ears of corn

1/4 cup mayonnaise

1/4 cup sour cream

1/2 cup crumbled cotija cheese (or feta cheese as a substitute)

1 teaspoon chili powder

1/4 cup chopped fresh cilantro

1 lime, cut into wedges

Salt and pepper to taste

Instructions:

  1. Preheat your grill to medium-high heat.
  2. Remove the husks and silk from the corn, leaving the stem attached for easy handling.
  3. Grill the corn on the preheated grill, turning occasionally, until the kernels are charred and tender. This will take about 10-12 minutes.
