Vegetarian Burger with Black Beans and Quinoa

Ingredients:

1 can of black beans, drained and rinsed

1/2 cup of cooked quinoa

1/2 cup of diced onion

1/2 cup of diced bell pepper

1/4 cup of diced jalapeno pepper (optional)

2 cloves of garlic, minced

1/4 cup of breadcrumbs

2 tablespoons of chopped fresh cilantro

1 teaspoon of ground cumin

1/2 teaspoon of salt

1/4 teaspoon of black pepper

2 tablespoons of olive oil

4 whole wheat buns

Toppings of your choice (lettuce, tomato, cheese, avocado, etc.)

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, mash the black beans with a fork or potato masher until they are mostly smooth.
  3. Add the quinoa, onion, bell pepper, jalapeno pepper, garlic, breadcrumbs, cilantro, cumin, salt, and black pepper to the bowl with the mashed black beans. Mix everything together until well combined.
