Chicken Piccata Recipe

Chicken Piccata is a classic Italian dish made with chicken breasts pounded thin and cooked in a lemon and white wine sauce. Here is a simple and delicious recipe:

Ingredients:

4 boneless, skinless chicken breasts

salt and pepper

flour for dusting

3 tablespoons olive oil

1/4 cup butter

1/4 cup fresh lemon juice

1/4 cup chicken broth

2 tablespoons capers

1/4 cup chopped fresh parsley

Instructions:

  1. Season the chicken with salt and pepper, then dust with flour.
  2. Heat the olive oil and butter in a large skillet over medium-high heat.
  3. Add the chicken to the skillet and cook for about 3 minutes per side, or until golden brown.
  4. Remove the chicken from the skillet and set it aside.
  5. Add the lemon juice, chicken broth, and capers to the skillet and bring the mixture to a simmer.
  6. Return the chicken to the skillet and spoon the sauce over it.
  7. Simmer for an additional 2-3 minutes, or until the chicken is cooked through.
  8. Garnish with chopped parsley and serve with pasta or rice.

Note: you can use dry white wine instead of chicken broth, and if you want it more saucy you can add more lemon juice and chicken broth.
