Chicken Piccata is a classic Italian dish made with chicken breasts pounded thin and cooked in a lemon and white wine sauce. Here is a simple and delicious recipe:
Ingredients:
4 boneless, skinless chicken breasts
salt and pepper
flour for dusting
3 tablespoons olive oil
1/4 cup butter
1/4 cup fresh lemon juice
1/4 cup chicken broth
2 tablespoons capers
1/4 cup chopped fresh parsley
Instructions:
- Season the chicken with salt and pepper, then dust with flour.
- Heat the olive oil and butter in a large skillet over medium-high heat.
- Add the chicken to the skillet and cook for about 3 minutes per side, or until golden brown.
- Remove the chicken from the skillet and set it aside.
- Add the lemon juice, chicken broth, and capers to the skillet and bring the mixture to a simmer.
- Return the chicken to the skillet and spoon the sauce over it.
- Simmer for an additional 2-3 minutes, or until the chicken is cooked through.
- Garnish with chopped parsley and serve with pasta or rice.
Note: you can use dry white wine instead of chicken broth, and if you want it more saucy you can add more lemon juice and chicken broth.
