Ingredients:
4 boneless, skinless chicken breasts
salt and pepper
flour for dusting
3 tablespoons olive oil
1/4 cup butter
1/4 cup fresh lemon juice
1/4 cup chicken broth
2 tablespoons capers
1/4 cup chopped fresh parsley
Instructions:
- Season the chicken with salt and pepper, then dust with flour.
- Heat the olive oil and butter in a large skillet over medium-high heat.
- Add the chicken to the skillet and cook for about 3 minutes per side, or until golden brown.
- Remove the chicken from the skillet and set it aside.
