Vegan Chili Recipe

1 cup dried lentils, rinsed and picked over

1 can black beans, drained and rinsed

1 can diced tomatoes

2 cups vegetable broth

1 tbsp chili powder

1 tsp cumin

1 tsp paprika

Salt and pepper, to taste

Instructions:

  1. In a large pot, combine the lentils, black beans, onion, garlic, bell peppers, jalapeño pepper (if using), diced tomatoes, and vegetable broth.
  2. Add the chili powder, cumin, paprika, and a pinch of salt and pepper.
  3. Bring the mixture to a simmer and cook, covered, for about 30 minutes, or until the lentils and vegetables are tender.
