Ingredients:
1 lb. breakfast sausage
6 eggs
1 cup milk
1 tsp. salt
1/4 tsp. black pepper
1/2 cup shredded cheddar cheese
1/2 cup shredded mozzarella cheese
1/2 cup diced onions
1/2 cup diced bell peppers
1/2 cup diced mushrooms (optional)
1/2 cup diced potatoes (optional)
Instructions:
- Preheat the oven to 350°F (175°C). Grease a 9×13 inch baking dish.
- In a large skillet, cook the sausage over medium heat until browned. Drain the fat from the skillet.
- In a mixing bowl, whisk together the eggs, milk, salt, and pepper.
- Add the sausage, cheddar cheese, mozzarella cheese, onions, bell peppers, mushrooms, and potatoes (if using) to the egg mixture, and stir to combine.
- Pour the mixture into the prepared baking dish.
