How to Make Perfect Scrambled Eggs - recipe by Mark Pantano

As simple as scrambled eggs are, it is amazing how many different ways there are to make them. Here I will explain how to make my version of perfect scrambled eggs.

Ingredients

Eggs
Butter
Salt
Pepper (if desired)

Directions

Set a medium-sized nonstick pan on medium heat and bring up to temperature.

Crack two large eggs and pinch of salt into a bowl and mix. Add black pepper if desired.

Add a good-sized pad of butter to the pan. Melt the butter and coat the entire pan.



Add the egg mixture and let sit for approximately 30 seconds or until the eggs just begin to get firm on bottom of pan.

With a spoon or spatula, scrape the bottom of the pan from the outside to the center in the four corners of the pan (top, bottom, left, right). Let the liquid egg mixture fill the empty space you just created. Wait another 30 seconds or so and repeat the process.

When the liquid egg mixture is almost gone, add another good-sized pad of butter and stir the eggs. *Don’t worry about adding too much butter, there is really no such thing. Butter is key to these eggs, so be sure to add plenty.

Before the eggs are completely done, remove from heat and transfer the eggs to a plate. If you wait until the eggs are done in the pan before removing them, they will end up being overcooked.
